Jason Moulton has continued a conversation with wine that started in the classroom.
Moulton’s fascination with wine began while attending school in Southern Illinois as soil science and microbiology courses sparked something deeper.
The microbial world was fascinating. Yeast converting sugar into alcohol, the presence of powdery mildew or botrytis in the vineyard; all the little details were a sirens call.
But the part that sealed it for Moulton was sensory evaluation.
“Being able to tune into my senses,” Moulton said. "The smell, the taste, the texture…that’s what makes wine come alive.”
He dissects it, studies it and ultimately lets it speak for itself. His work with fruit from the Petaluma Gap AVA, specifically the winery’s newest site, windswept Sonoma Stage Vineyard, is a reflection of both precision and curiosity.
